Chocolate Frosted Donuts + Happy Birthday Bilbo & Frodo

Happy Birthday, Bilbo & Frodo! Today are my favorite fictional character’s birthdays. If you don’t know I’m totally obsessed with The Lord of the Rings I have read all the books (more than once!) and watched all the movies (more than once!). So making a birthday treat in honor of them was a no-brainer. I wanted to make a dessert that had something to do with the infamous ring, so donuts were an obvious choice. And chocolate frosted my personal favorite sweetened the deal. If you don’t know the ring says, “One Ring to rule them all, One Ring to find them, One Ring to bring them all, and in the darkness bind them.” I tried to write this quote in the Elvish on the donuts but I failed (it was bad). I finally settled with sprinkling gold sprinkles to make it look like a ring. Anyway, Happy Birthday to my two favorite fictional characters, now on to these beauties.

YIELD: 20 mini donuts PREP TIME: 20 minutes COOK TIME: 10 minutes TOTAL TIME: 30 minutes

INGREDIENTS:

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1 egg
  • 1/3 cup packed light brown sugar
  • 1/4 cup milk
  • 1/4 cup yogurt
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract

Chocolate Frosting

  • 1/2 cup semi sweet chocolate chips
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons water

DIRECTIONS:

  1. Start by mixing all dry ingredients together (does not include brown sugar)
  2. Next in a separate bowl mix together egg, brown sugar, milk, and yogurt.
  3. Once mixtures is combined add melted butter and vanilla.
  4. Pour mixture into dry ingredients and combine. Don’t over-mix!
  5. Next poor mixture into donut maker-(check notes below for alternative).
  6. While baking make the chocolate frosting. Put all ingredients in microwave safe bowl and microwave in increments of 30 seconds, mixing after each.
  7. Once donuts are done baking, dip each into chocolate and decorate (with sprinkles, nuts, chocolate chips, or keep ’em plain)
  8. Allow donuts to set and enjoy!

NOTES:

  • You don’t need a donut maker to make these! If you don’t have one just bake them in a donut pan- at 350 degrees for 10 minutes; if you don’t have a donut pan you can bake them in a mini muffin pan for donut holes- at 350 degrees for 10 minutes.
  • If chocolate isn’t your thing you can make an old fashion glaze.
