Red velvet cupcakes are the type of cupcakes I try to make for any occasion possible, because of the vibrant red act as a show stopper. The first time I used this recipe I was a bit skeptical because they didn’t taste good but as they cooled and when I applied frosting all my worries withered away! The cake and frosting complement each other in way that makes them so addictive. Whilst making these I forgot to take a picture of them with the frosting on top, but since I make these frequently I will post a picture with the frosting soon. Anyway back to these mouth watering cupcakes, these cupcakes fit into any occasion holiday parties, birthday’s, or just any get together with people who love good ol’ cupcakes.
Red Velvet Cupcakes
YIELD: 24 servings PREP TIME: 15 minutes
COOKING TIME: 20 minutesTOTAL TIME: 35 minutes
INGREDIENTS:
- 2 1/2 cups cake flour
- 2 tablespoons unsweetened Dutch-process cocoa powder
- 1 teaspoon salt
- 1 1/2 cups sugar
- 1 1/2 cups vegetable oil
- 2 large eggs, room temperature
- 1/2 teaspoon red gel-paste food color or red liquid food coloring (1/2 bottle)
- 1 teaspoon pure vanilla extract
- 1 cup buttermilk
- 1 1/2 teaspoons baking soda
- 2 teaspoons distilled white vinegar
- Cream Cheese Frosting
DIRECTIONS:
Preheat oven to 350 degrees. Next line cupcake pan with liners. Whisk together cake flour, cocoa, and salt. In a separate bowl mix sugar and oil until combined. Add eggs one at a time. Mix in food coloring and vanilla. Next add flour alternating with butter milk. Stir together baking soda and vinegar in a small bowl (it should foam); add baking soda vinegar mixture into bowl and mix until combined. Fill batter with an ice-cream scoop in cupcake pan and bake for about 20 minutes or until baked. Then frost cupcakes with your choice of frosting (I recommend cream cheese).
