Cream Cheese Brownies

I hope you had a lovely Valentine’s Day whether you spent it with your girls or had a romantic dinner. I know you probably already over indulged this weekend, but these brownies are out of this world. The sweet but tangy combination works really well together. Also they are so pretty looking!

Cream Cheese Brownies

YIELD: 16 brownies PREP TIME: 30 minutes

COOKING TIME: 50 to 60 minutes TOTAL TIME: 1 hour 30 minutes

INGREDIENTS:

  • 2/3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 ounces unsweetened chocolate, chopped
  • 4 ounces bittersweet chocolate, chopped
  • 8 tablespoons unsalted butter, cut into pieces
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 eggs
  • 8 ounces cream cheese, room temperature
  • 1/4 cup granulated sugar
  • 1/2 teaspoons vanilla
  • 1 egg yolk

DIRECTIONS:

Adjust the oven rack to the lower middle and preheat oven to 325 degrees. Take out square pan (8×8) and place parchment paper that has been sprayed with cooking spray. Next whisk flour, baking powder, and salt in a separate bowl. In a microwave safe bowl melt butter and chocolate; in increments of 30 second or use the double broiler method (refer to: Chocolate Cherry Bark). When completely melted add sugar and vanilla extract until combined. Allow mixture to cool, when cool add eggs one at a time and mix vigorously. Add dry ingredients and whisk until incorporated (do not over mix). Make cream cheese swirl by blending cream cheese, sugar, vanilla, and egg yolk in a bowl. Pour 1/2 of the brownie batter in square pan. Then add a drop 1/2 of cream cheese mixture by spoonful’s. Repeat the layering process and swirl with a toothpick or butter knife. Place in the oven until the edges are firm but, the center is light. This process usually takes 50-60 minutes, just make sure to check at the 45 minute mark. Allow brownies to cool for 3 hours in the fridge, when cool cut into squares and enjoy.

NOTES:

  • I placed my brownies in the freezer to speed up the cooling time.
  • I ran out of granulated sugar so I used confectioners sugar for the cream cheese swirl.

My favorite baked dessert is a simple brownie they are moist and chocolaty all at once! I also love warm chocolate chip cookies, but I haven’t discovered a full proof recipe yet (Any suggestions? link ’em below).
