When it is cold all I want is a bowl of hot soup, I mean how amazing is the feeling of hot soup going down a frigid body! I love soups that have some sort of creamy factor, so broccoli cheese soup was up my alley. This recipe is absolutely delicious and even better in a bread bowl.
Broccoli Cheese Soup
YIELD: 10 serving Prep Time: 10 minutes
Cooking Time: 30 minutes Total Time: 40 minutes
- 1 whole onion, chopped
- 1 stick 1/2 cup butter
- 1/3 cup flour
- 4 cups of milk (I used 2%)
- 2 cups of Half-and-Half
- 4 heads of broccoli, chopped
- 1 pinch of nutmeg
- 3 cups grated cheese (I used mild cheddar)
- Salt as needed
- Black pepper
Start by melting butter in a cooking pot, add onion chopped. Cook onions for 3-4 minutes, then add flour and stir. Pour milk and half-and-half. Next add nutmeg, then broccoli, salt if needed, and black pepper. Cover reduce heat to low and allow to simmer for 20 to 30 minutes, or until the broccoli is tender. Now stir cheese and allow to melt. Taste seasoning, add salt if needed. Next mash brocolli or blend in a blender, if blend then return to heat.
